Mushroom Pizza

Mushrooms are a classic pizza topping. You can put oyster, shiitake and lion’s mane mushrooms on a ready pizza from your neighborhood pizzeria, a store-bought freezer pizza, or on a pizza made from scratch. If you want to give them a special flavor boost, you can flambé the mushrooms. If you are making pizzas from scratch, try putting these fried mushrooms on a ‘white’ pizza with crème fraîche as a base, some cheese of your taste, capers and thinly sliced garlic.

Topping for 2 pizzas

Ingredients

  • 100g oyster, shiitake or lion’s mane mushrooms, cut or torn into bite-size chunks
  • 3 tbsp Olive oil 
  • 5g Butter (optional)
  • ½ tsp Salt & pepper
  • ½ dl Brandy (optional)

Method

  1. Add the mushrooms, half the olive oil and the salt to a medium-sized bowl and mix well. Set aside for 15 min.
  2. Heat a frying pan to medium hot and add the remaining olive oil and the butter if using.
  3. Fry the mushrooms until just starting to brown on the edges, but not too much.
  4. To flambé them, bring the heat up to high, add the brandy and set on fire. Take off the heat as soon as the flames have died down.
  5. Add the mushrooms to your pizza before it goes into the oven.
