Grilled Oyster & Shiitake Mushrooms
Oyster and shiitake mushrooms have a very meaty texture, and are very suitable for grilling. However since they don’t contain any fat, the key to grilled oyster or shiitake lies in the marinade. Adding salt and letting them sit in an oily marinade for 15-30 min starts to draw out some of the water from the mushrooms, so the grilling can be done without risk of burning them. This recipe is the base marinade to which you can add all kinds of spices you like. Shiitake and oyster mushrooms are very good at absorbing spices. If you have big enough specimens you can even make ‘smashed mushroom’ patties for a superb vegan burger!
Serves 4

Ingredients
- 200g Mixed mushrooms
- 2 tbsp Olive oil
- 1/2 tsp salt
- Optional: paprika powder, chili, cumin, rosemary, crushed garlic
Serving marinade (optional)
- 1 tbsp honey
- Juice of 1 lemon
- 2 tbsp olive oil
Method
- Add the mushrooms, half the olive oil and the salt to a medium-sized bowl and mix well. Set aside for 15-30 min.
- Grill the mushrooms for about 5 minutes on each side, keep the lid of the barbeque closed.
- Meanwhile, in a serving plate make the serving marinade by mixing the lemon and olive oil. Tip: you can add any leftover marinade to this as well.
- Add the mushrooms, pour over the honey while they’re hot, pour over the serving marinade with a spoon.
