Lion’s Mane Crostini
These lion’s mane crostini are easy to make and simply delicious.

Ainekset
- 200 g Lion’s mane mushrooms
- 6-8 slices of (yesterday’s) white bread
- A handful of basil or parsley, finely chopped
- 2 cloves of garlic, finely chopped
- 1 dl good quality olive oil
- 1 tsp lemon juice
- Salt flakes
Method
Mix the herbs, garlic, half of the oil and lemon juice in a small bowl or jar.
Slice the Lion’s mane in 1 cm slices. Add the rest of the olive oil to a frying pan and bring to a medium heat. Fry the mushroom slices gently on each side until slightly browning on the edges. Sprinkle a few salt flakes over the mushrooms when done.
Meanwhile, toast the slices of bread in the toaster or in a pan with some oil.
Brush some herb oil on the toast and top with a slice of mushroom. Serve immediately.
