Sihis – Mushroom Pie
Sihis™ is Helsieni’s trademarked vegan snack. It is made with oyster mushrooms grown on coffee grounds. Sihis is a mushroom version of the popular Finnish meat pie: Lihis. This simple formula can help you remember the name: sieni + lihis – liha = sihis. We like to serve our Sihis with mustard, ketchup and Chris’ dangerously spicy chimichurri!

Dough
50 g yeast
0.5 l water
1 tsp salt
0.5 dl oil
900 g – 1 kg (12 – 13 dl) wheat flour
Filling
2 dl rice
1 onion
0.5 kg mushrooms
Black pepper
~ 2-3 l oil for deep-frying
Method
First, prepare the dough:
Dissolve the yeast in lukewarm water. Knead in the other ingredients and let the dough rise covered with a cloth in a draft-free place.
Cook the rice according to the package instructions and set aside.
Dice the mushrooms and onions into small pieces. Fry in a pan until the mushrooms turn golden brown. Season with pepper. Mix into the rice.
Shape the dough into 20 pies, fill with the mushroom-onion-rice mixture, and seal them well.
Deep-fry on both sides for a total of approximately 2-3 minutes. Keep the oil below 170°C throughout the frying process.
