150g of Helsieni Oyster mushrooms, pulled into 2cm parts.
1/2 a red onion, finely chopped
1 red chili, finely chopped
handful of chopped fresh coriander leaves
1 avocado
Put the mushrooms in a medium bowl. Pour the lime juice over them and mix gently to combine. Let the mushrooms marinate for about 20 minutes. Mix in all the remaining ingredients. Season with salt and pepper, to taste. Serve on toasted bread.
